Roasted Brussels Sprouts: Bacon, Cranberries and Walnuts, Oh My!

These roasted balsamic Brussels sprouts are absolutely delicious. Baked with dried cranberries, bacon and walnuts, they are a healthy, Whole30 side dish everyone will love. They’re also paleo, gluten-free and low carb, and a really easy and tasty way to get vegetables on the table. With only 5 ingredients and 30 minutes, this is sure to be your go-to method for cooking brussels sprouts!

Ingredients

  • 1 pound Brussels sprouts
  • 1/2 cup dried cranberries (no added sugar)
  • 3/4 cup chopped walnuts
  • 4 slices uncooked bacon, chopped
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat oven to 350 degrees F
  2. Wash and cut Brussels sprouts in halves
  3. Place them on a baking sheet and add cranberries, walnuts and bacon
  4. Drizzle with balsamic. Toss to coat and evenly distribute ingredients
  5. Bake for 35-40 minutes depending on preference of how roasted the Brussels are

Notes

  • Optional (not Whole30/Paleo): Add 1/4-1/3 cup of parmesan in the last 5 minutes of baking
