One Pan Whole30 and Paleo Caribbean Jerk Chicken

Ingredients

  • 1.52 pounds of chicken drumsticks
  • 2 cups potatoes, thickly diced
  • 1 and 1/2 cup of onion, chopped
  • 3 long carrots, sliced
  • 3 stalks celery, chopped
  • 1 cup chicken broth
  • 2 tablespoons coconut aminos
  • 2 tablespoons honey (no additives) – exclude if doing Whole30
  • 2 tablespoons olive oil

For the Seasoning:

  • 1 tablespoon dried onion
  • 1/2 teaspoon garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon nutmeg

Instructions

  1. Add honey, oil, coconut aminos and spices for the seasoning into a large bowl
  2. Stir until combined
  3. Place chicken in the bowl and stir to coat chicken
  4. Cover and refrigerate 1 hour-24 hours
  5. Once chicken has marinated, remove from fridge
  6. Preheat oven to 400 degrees F.
  7. Chop veggies and place in the bottom of a large rimmed baking dish
  8. Pour chicken broth into dish
  9. Place marinaded chicken on top of the veggies
  10. Put dish into oven for 40 minutes, turning chicken halfway through
  11. Every oven differs slightly, so check chicken before taking it out and give it a few more minutes if it needs more time!
