Broiled Cod

Broiled cod is a quick and easy recipe that’s perfect for a family fish dinner. This recipe is gluten free and can be made dairy free easily and with a grand total of 7 ingredients it’s a breeze to make. Cod is one of the more common fish fillets you see around and having a solid recipe to prepare it is crucial and at ten minutes of cook time broiling cod is the way to go.

Ingredients

  • 1-pound cod fillets (4 fillets)
  • 4 tablespoons butter (or ghee/vegan butter/olive oil)
  • 1 tablespoon minced garlic
  • 1.5 tablespoon lemon juice
  • ½ teaspoon onion powder
  • 23 tablespoons chopped parsley
  • Salt and pepper, to taste
  • Lemon slices, optional for serving

Instructions

  1. Adjust your oven racks so the rack closest to the broiler is about 6 inches from the broiler. Preheat the broiler on the oven
  2. Dry both sides of the cod fillets with a paper towel, and season well with salt and pepper on both sides
  3. Add the butter to a large cast iron skillet over medium-high heat. Once the butter is melted, add in the garlic and stir with the butter until fragrant. Then stir in the lemon juice and onion powder
  4. Add the cod fillets into the skillet and sear for about 1 minute, and then flip them carefully. Place the skillet into the oven and broil for 7 to 10 minutes, until the internal temperature is 130-140 degrees F. The time needed will depend on the thickness of your fillets. For thinner fillets, check them closer to 7 minutes, and thicker ones check closer to 10 minutes
  5. Remove the skillet from the oven, garnish with parsley, lemon slices and additional salt and pepper, if desired

Notes

Dairy Free Broiled Cod: If you want to make this recipe dairy free, just swap out the butter for ghee, olive oil, or vegan butter and make the recipe as normal.
