BBQ Pulled Pork Bowls

Ingredients

  • 2 sweet potatoes, diced
  • 2 heads of broccoli florets
  • 34 cups shredded pork
  • 1/21 cup sugar-free BBQ sauce
  • 3 tablespoons avocado oil
  • 1/2 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet with tin foil
  3. Add veggies, spices and oil
  4. Mix with hands to coat with the oil and spices
  5. Place in the oven for 30-40 minutes or until baked to desired doneness of roasted veggies
  6. Divide up veggies into individual bowls or containers
  7. Add in pork (heat in a skillet if eating now)
  8. Drizzle with BBQ sauce or mix in BBQ sauce before adding to bowls
  9. Serve and enjoy!
