Whole30 Lemon Chicken Skillet with Broccoli (Paleo, Low Carb)

This Whole30 lemon chicken skillet with broccoli is my favorite quick 30 minute meal. Skillets are perfect for easy one pan meals that don’t take all night and have easy clean up. The lemon in this Whole30 and Paleo recipe makes it light and refreshing and just adds a ton of flavor.

Ingredients

  • 34 chicken breasts (I used three particularly large ones)
  • 3 cups broccoli florets
  • 1 cup Chicken Broth
  • 1/4 cup fresh lemon juice (about 1/2 small lemon)
  • 1 tablespoon olive oil
  • 1/2 tablespoon minced garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Parsley and lemon slices to garnish

Instructions

  1. Heat oil in a large skillet over medium heat. Season the chicken breasts with chili powder, onion powder, salt and pepper on both sides and add to the skillet
  2. Squeeze 1/2 lemon over chicken or dump in the juice, cooking for 5 minutes on each side
  3. Add in broccoli, garlic, and chicken broth into the skillet. Let cook for an additional 10 minutes, stirring broccoli occasionally and flip chicken breasts one more time until chicken is cooked completely and broccoli is fork tender
  4. Top with chopped parsley and another squeeze of lemon or lemon slices
