Ingredients

  • 12 eggs
  • 2 cups hash browns
  • 3 cups ham
  • 1/4 cup milk
  • 1/2 onion
  • 1 red pepper
  • 1 green pepper
  • 1 tsp garlic
  • 2 tsp parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • (Optional) 1-2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375 degrees F
  2. Add hash browns in an even layer to the bottom of a casserole dish
  3. Mix the eggs and milk in a large bowl until well combined
  4. Add the rest of the ingredients to the milk and eggs and thoroughly mix
  5. Pour egg mixture in an even layer into the casserole dish
  6. Bake at 375 degrees F for 50 minutes. If adding cheese to the top, do this with 20 minutes of cook time remaining
