Whole30 Greek Salmon: Paleo, Gluten Free with Air Fryer Instructions

This oven baked Whole30 Greek salmon recipe is an easy way to meal prep or make a quick weeknight meal. It bakes in 15 minutes or cooks in the air fryer in just 10 minutes. This Whole30 salmon is also gluten free, low carb and paleo, so everyone can enjoy it! Lemon juice and a blend of spices like oregano, dill and basil in the marinade will ensure your salmon is bursting with flavor.

Ingredients

  • 1 pound salmon (34 fillets)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon dried basil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • Optional: 1 teaspoon dried parsley for the marinade, or 1 tablespoon finely chopped fresh parsley to garnish, lemon wedges or dairy free tzatziki for serving

Instructions

Oven Instructions:

  1. Preheat the oven to 400 degrees F. and line a baking sheet with oven-safe parchment paper
  2. In a small bowl, combine the olive oil, lemon juice and all spices. Stir well so the spices are fully incorporated with the oil
  3. Pat each of the salmon fillets dry and place them onto the baking sheet skin side down. Use a spoon or a marinade brush to coat each piece of salmon with the Greek marinade. Don’t overdo it with the marinade, but do be sure to have a good amount of the minced garlic and seasonings left behind on top of the salmon
  4. Place the sheet pan into the oven and bake the salmon for 12-15 minutes, depending on how thick your fillets are. Remove from the oven and serve with chopped parsley and lemon wedges

Air Fryer Instructions:

  1. If your air fryer requires it, preheat it to 400 degrees F.
  2. In a small bowl, combine the olive oil, lemon juice and all spices. Stir well so the spices are fully incorporated with the oil
  3. Pat each of the salmon fillets dry and place them onto a plate or cutting board skin side down. Use a spoon or a marinade brush to coat each piece of salmon with the Greek marinade
  4. Place the salmon fillets into the air fryer basket or rack. Depending on the size of your air fryer, you may only be able to do 2 fillets at a time and need to do this in 2 batches
  5. Cook on 400 degrees F. for 10 minutes. Remove the salmon fillets from the air fryer and garnish with chopped parsley and lemon wedges

Notes

Optional: The day prior to cooking, you can add the salmon fillets into a bag or container with the Greek marinade and place it in the refrigerator overnight to marinate
