Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup grated red or yellow onion
  • 3 tbsp chopped parsley
  • 2 tbsp minced garlic
  • 5 mint leaves, chopped
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Grate your onion into a large mixing bowl. Combine all of the remaining ingredients and use your hands to incorporate everything well, without over-mixing
  3. Roll into 1/2 inch meatballs and place directly onto a sheet pan. If you have one, use an oven safe cooling/baking rack placed on top of the sheet pan to elevate the meatballs off of the pan (this will allow fat to drip off)
  4. Place the sheet pan into the oven and cook for 25 minutes, or until browned

Notes

  • If your meat mixture is too wet, you can add 1/2 cup of almond flour, but it is not necessary
